Seared Filet Mignon
Ingredients:
- 4 filet mignon steaks
- 5-6 small red potatoes quartered
- 1 small onion chopped
- 10-12 baby tomatoes
- 1 green pepper
- 1 red pepper
- 1 tsp thyme
- 1 clove garlic minced
- 1 tbsp olive oil
- Salt & pepper to taste
Directions:
Preheat the oven to 375 degrees. In a frying pan, heat the olive oil and sauté the onion and garlic over medium heat. Place the filet mignon steaks into the frying pan with the sautéed onions and garlic and sear all sides for 2-3 minutes. Line the bottom of a roasting pan with red potatoes, baby tomatoes, green pepper and red pepper. Place the filet mignon steaks on top of the vegetable layer, pouring the entire contents of the frying pan on top. Add salt and pepper and continue to roast for about 15-20 minutes until desired doneness. Serve filet mignon on top of roasted vegetables.
Filet Mignon with Mushrooms
Ingredients:
- 4 filet mignon steaks
- 1 clove minced garlic
- 2 cups chopped mushrooms
- ½ cup chopped onion
- 2 tbsp fresh basil
- 2 tbsp olive oil
- ½ cup white dry wine
- Salt & pepper to taste
Directions:
Preheat the oven to 325 degrees. In a frying pan, heat 1 tbsp of olive oil to medium heat and sear all sides of each filet mignon for about 4 minutes. Remove the filet mignon from the frying pan and add 1 tbsp olive oil, garlic, mushrooms, onion, basil, salt, pepper and white wine and heat for 3-5 minutes. Place the filet mignon steaks in the oven for 5-10 minutes. Allow the filet mignon steaks to sit for 3-5 minutes. Meanwhile, spoon the mushroom mixture over each filet mignon. Serve filet mignon with steamed vegetables and wild rice.
