Filet Mignon with Shiitake Mushrooms

Ingredients:
- 4 filet mignon steaks
- ¼ cup chopped onion
- 2 cloves garlic minced
- 1 tsp parsley
- 1 tsp tarragon
- 2 tbsp olive oil
- ½ cup Sambuca Liquor
- Salt & pepper to taste

Directions:
Preheat the grill to medium-high.  In a frying pan, sear all sides of filet mignon for 3-5 minutes.  Grill the filet mignon for 15-25 minutes until desired doneness.  Using another pan, heat olive oil and sauté shitake mushrooms, onion and garlic unit transparent.  Serve the filet mignon immediately and top with shitake mushroom mixture. 

Filet Mignon Kabobs

Ingredients:
- 4 filet mignon steaks - chopped into quarters.
- 8-10 White Mushrooms
- 8-10 Cherry Tomatoes
- 1 Sweet Onion slices
- 1 clove garlic minced
- 1 tsp parsley
- 2 tbsp olive oil
- ½ cup red wine
- Salt & pepper to taste

Directions:
Preheat the grill to high heat.  In mixing bowl, combine the garlic, parsley, red wine, salt, pepper and olive oil.  Add the filet mignon, mushrooms, tomatoes and onions to the marinade.  Marinade the filet mignon in the refrigerator for 2 - 4 hours.  Put the filet mignon, mushrooms, tomatoes and onions – alternating on skewers.  Place loaded skewers on the grill for 7-10 minutes – basting often with the marinade.  Serve immediately with fresh salad and baked potatoes.
